Our standard carcass's are cut into:
- Steaks -> Sirloin, Rump, Fillet and Ribeye
- Joints -> Brisket, Topside/Silverside
- Others -> Mince, Burgers, Braising Steak, Stewing Steak and Fat
All Beef is left to hang for a minimum 21 days.

Estimated Carcass weights -> 110kg - 170kg+
